Event Overview
Brown Sugar and Cinnamon Roasted Pineapple Tamales, with (Whiskey) Caramel Crema (optional, see below)
Agenda: Eat a tamal. Make a half dozen tamales. Relax, talk, wait for them to cook. Eat guacamole. Take a half dozen tamales home!
No experience necessary! The masa (dough) will be made prior to your arrival and class will focus on assembling the tamales. Also, the recipes for the tamales and caramel sauce will be given to all students.
Dietary concerns?
- I will have caramel without alcohol.
- They are vegetarian- instead of lard, I use a mixture of butter and coconut oil.
- The corn "flour" used is gluten free.
It's going to be a rough day, but I know you can handle it! Feel free to bring some wine or other drink if you'd like. I'll make the guacamole to snack on while they are cooking. If you'd like to bring a snack, that's fine, too.
This will take place at my home in Hyde Park and I have a cat, so be forewarned if you are allergic.

- Homemade caramel sauce
- Homemade mole poblano
During the guacamole break I will also warm up some tortillas and mole so those who are interested can taste the mole before purchasing; the mole poblano is not vegetarian, it is made with chicken stock.
What to Bring
Bring a drink or snack if you'd like, but you should eat before class.

Sarah is discovering her foodie superpowers and developing a blog, in addition to teaching classes on making tamales. She is half Mexican and half Irish, which shows up in recipes such as a Mexican Chocolate Guinness Cake and Pineapple Tamales with Whiskey Caramel Crema. In general she loves travel, culture, and bringing other various food traditions together, such as a Spanish Tortilla with Mexican Chorizo.

What a great class! Sarah is a great, so knowledgeable and forthcoming. The class was well organized and we mastered the art of making tamales! We ate and chatted while waiting for the labors of our class to steam! Sarah's caramel sauce (with or without whiskey) is a fabulous addition to the pineapple tamales we made.
