(Said in our best makeshift Italian accents, of course.)
This three hour Dabble workshop is gonna be a gouda one, folks. It's all about how to take fresh, local ingredients and turn them into creamy, soft cheeses! We'll learn how to make two mainstays of Italian cooking-- ricotta and mozzarella-- and you'll leave knowing you'll never have to pay for either at the grocery store again after our lesson on shopping, prepping, making and serving.
After accomplishing a great cheese feat, class will end with consuming the delicious fresh cheese, and will also include samplings of homemade hard cheeses like cheddar and Swiss to leave you feeling briepared to take on more difficult cheese projects at home. Yum!

MORE ABOUT YOUR HOST
Richard McGaughey learned to make cheese years ago from his grandfather. In his 20's he worked at a local dairy, and those experiences combined with a book about the New England cheese company helped him create his first batch of cheddar, and subsequently spurned a lifelong love for making cheese. After Richard retired 10 years ago, he took up the suggestion of his wife and decided to start teaching cheese making classes. He's been teaching at local community education venues ever since. Rich believes you can learn to make any cheese that is commercially sold, and can't wait to show Dabblers a few of those cheeses in this class!
