Event Overview

Ever wonder the journey your coffee takes before arriving in your cup? This class tackles that very subject as it follows coffee from seed, to tree/shrub, to fruit, to harvest, to processing, onto exporting and importing, selecting/buying, roasting, grinding and finally to brewing.

This class will cover 10 stages as coffee travels from seed to (your) cup. The class will conclude with a coffee cupping -think something akin to a wine tasting, but communal and instead of having your own glass stemware set you have a spoon.

At the conclusion of this class you will better understand the journey coffee travels from seedling to brewed cup, as well as, experience a coffee cupping -which is how green coffee buyers make buying decisions and how roasters decide on a roast profile/degree of roast and do quality control.

Scott is a co-owner of Sump Coffee in St. Louis, Missouri; a retail coffee shop and coffee roaster. He is keeper of the flame, green coffee buyer, and chief coffee maker/brewer/shot puller. He continually sings the praises of coffee and how it is more chemically complex than wine and as such, merits a co-equal space in the pantheon of culinary crafts and delights.
