Chef Alia Dalal

Chef Alia Dalal began working in restaurants at age 16 and received her formal culinary training at the Natural Gourmet Institute for Health and Culinary Arts. With a passion for vibrant, natural cuisine, Alia was named Healthy Cook of the Year in 2010 by Cooking Light magazine. After working in Michelin-starred kitchens in New York City and Chicago and an Ayurvedic destination spa in India, she realized that what she was really interested in was helping people eat quality, real food everyday–food that both tastes great and leaves you feeling great.

Alia is passionate about helping people improve their lives through healthy eating and habits. An energetic public speaker, she has taught cooking classes and done cooking demonstrations across the country at places like Whole Foods Market and the New York City Greenmarkets. In 2013, Alia was also named a finalist in WTTW’s search for a host for the Chicago cult restaurant review TV show Check, Please! Alia currently hosts a late night style talk show on good food and beverage in Chicago called Nightcap.

    This was a great class! You could tell that Alia really knew what she was talking about. I liked that the recipes were all really simple and easy to make at home, and Alia did a good job explaining how everything could be adjusted based on personal preference and what you have in your frig. I really liked how the two salads would be easy to take to work and keep for a few days.

    This class was so much fun! Both of the teachers were very friendly and knowledgeable. We made some great drinks, that were pretty easy to make and I look forward to trying on my own. I would be open to taking another class like this from the teachers and I would highly recommend this one!

    This class is engaging, informational, and FUN. I didn't really know what to expect and walked in and Alia had the first drink ready to go, which made the class more social and relaxed from the start. She then showed us how she made the first drink while we sipped on it and then Todd spoke about the basics of gardening- which was extremely helpful to me as he is very knowledgeable. Then we were able to make the next 2 drinks all while Alia gave us some history on the liquors and how they were invented, which was really interesting. Overall, this class is a great way to get a little tipsy while getting your hands dirty and learning a few new things. Also, a great bonus was they gave each person the recipes and instructions, a seed to grow our own plants, and our own bitters!

    The Craft Cocktails from Your DIY Herb Garden class was fun, social, and educational. I came into the class with zero gardening experience, and assumed my apartment would be unsuitable to grow any type of plant life. Todd was extremely knowledgeable about the subject, and helped teach me how to properly grow an herb garden. Alia was very engaging and energetic. She was able to instruct the class how to create three fun and easy drinks, while also giving a background to where each drink originated from. I would highly recommend this class to friends and family, and will be keeping an eye out for more classes from Alia and Todd!

    Todd and Alia's class was super informative, and very fun! I liked that we were able to create the drinks ourselves from Alia's instructions! The instructors did a good job of describing exactly why and how they follow certain processes. For the herb/plant growing instruction of the class, Todd made sure to connect the lesson to our day to day life. He made note our growing conditions, and gave tips for our specific spaces. Alia also made the class interesting by giving us the historical background on the origin of the drinks. Overall, it was a great experience, and I even got to use the drink recipes at a party the next day!

    This was such a fantastic class and I HIGHLY recommend it!! It was my first dabble class ever, and I couldn't have had a better experience. It was so fun and informative and I would totally take the same class again just for the heck of it :) The cocktails were really interesting and I am going to make them at home and impress my friends. So glad I did this!

    What could be a more fun weeknight activity? Skip the boring Happy Hour and head over to Craft Cocktails from your DIY Herb Garden! You'll learn some tips for making "notyourgrandfather's" cocktails as well as useful container growing advice for fresh herbs. Class was fun, casual, and informative. Feel free to shout out your questions as you go along - there's no formal structure. Alia and Todd are full of knowledge, so probe away.

    I didn't realize how great this class was until I made my first drink from the class at a party. Success! The class itself was fun and taught us how to make a killer drink! The gardening skills will come in handy next spring, too.
