Event Overview
This special class teaches you a variety of methods of canning fresh tomatoes, from using an auto canner to just hot water in a pot. The first part of the class, we will discuss different techniques of canning. Then we will dice up fresh, local tomatoes. Finally, we will have a live demonstration using both an auto canner and a water bath technique. We provide the cans and tomatoes along with other ingredients to make a salsa. We will also have recipes for homemade tomato sauce, as well as a discussion of the history of tomatoes, their rise to popularity, and the differences in variety - all while preparing delicious salsa!
This class is a one time event, as part of our Sustainability Group at IGLOO Chicago. The Sustainability Group meets every Sunday from 5 to 7 PM in Pilsen at this location.

Charlie is a passionate learner who, after earning his Master's degree in urban planning, has spent much of his time wondering why the world is the way it is. His interests lie in how cities are built and how people interact within these cities. Recently he has focused on sustainable agriculture and has worked on a five-acre organic farm outside Chicago, as well as in his own garden. Charlie's vision is to connect people in under-served communities with healthy food, encouraging the incorporation of local food systems. Charlie also plans to learn more about humans' place on earth and how we can be in better harmony with such an extraordinary natural world. He currently is a PhD student at UIC's Department of Urban Planning and Policy.
