Event Overview

If you are reintroducing meat into your diet, or introducing meat into your body for the first time and do not know where to begin, then this class is for you!

In this class you will learn about several cuts of meat that are lean, easy to prepare, not too "heavy", and are great starters for aspiring carnivores. We will only be preparing pasture-raised, organic, humanely killed, local meat that is not only supporting a great farmer and his family, but is better for the animal, the environment, and for your body.

Using different cooking methods (pan sauteeing, broiling, and roasting, I will be introducing you to chicken breasts, chicken thighs, and a lean cut of steak. You will be leaving the class with several recipes; new knowledge about different cuts, where to find meat that is good for you and the earth/animals; and how to cook these cuts with confidence!

Farm-fresh meat will be available for purchase. If you have an allergy, or if you are interested in also learning how to cook a pork product, please let me know in advance!

She has helped to butcher animals with Chicago chefs, stages at several high-profile Chicago restaurants, volunteers her time at local farmers markets selling meat, spends time at local farms learning about how animals are raised and processed, and has cooked just about every cut of meat out there.
