Do you remember the days when all you needed to satisfy a chocolate craving was a few Hershey's Kisses, a mini-Twix or maybe if you were treating yourself to the good stuff, a Godiva chocolate truffle? What about when chocolate was simply broken down into three categories; dark, milk and white? Well we've evolved quite a bit as a species since then and can now revel in craft chocolate - a growing industry akin to the third wave coffee scene. Bean to bar chocolates, as they're known, are skillfully crafted bars and confections, using ethically sourced ingredients, a laborious process, and packed with a healthy boost (cacao is rich in flavonoids, magnesium, and more).
You might ask what is real chocolate anyways and who is making it? What do cacao percentages mean to me the buyer? It is better to be fair trade or small batch? What is important to know when buying chocolate? And perhaps most important, what does it taste like?
These questions and more will be answered and explored as we gather for a chocolate tasting class. Weather permitting, we may take the class upstairs to the patio overlooking the city of Denver. You'll learn, savor, and catalyst your interest in artisan chocolate; I promise they'll be very new brands that you're not accustomed to seeing at the supermarket. Come join me - let's nosh!

Lauren is a self-proclaimed chocoholic and evangelist. Like Katharine Hepburn who reportedly ate one pound of chocolate a day, she can be found touting a fine quality bar in her purse. Maybe it's no surprise that Willy Wonka was one of her favorite movies growing up! But since those memories she's explored tropical climates where cacao is grown, worked at a distinguished bean to bar chocolate factory in San Francisco, and profiled artisan crafters for journalism outlets. She'd be delighted to share her passion and healthy obsession with you.
This was a fun class and an enjoyable evening. Lauren is very knowledgeable about chocolate and her enthusiasm showed! I enjoyed learning the history and some contemporary issues about cacao, but the tastings were the best part! We learned about the process of making chocolate and the ingredients used, and I was able to taste the subtle differences.
