Pardon our boldness for a moment, but it has to be said: Cheese is the unsung hero of the kitchen. What other ingredient plays such an integral role in every single mealtime? For breakfast, we love cheese in omelettes and quiche. For lunchtime, we invite cheese to take our sandwiches to the next level, and even celebrate it on its own with the classic American grilled cheese. For dinner, we throw cheese everywhere-- on pizza, pastas, potatoes and more. And we even pair cheese with wine for dessert!
The right cheese can elevate a meal from good to great, and sometimes ... (this one's for the picky six year old in all of us) ... from inedible to edible. There are as many types of cheeses as there are meals to adorn it with. But one kind of cheese we don't think of often is the kind you make yourself.
Join veteran home cheese maker Linda Conroy for this fun Dabble class that heralds the boldness of cheese! Students will be introduced to the world of home cheese making, and cover the basic ingredients, tools and procedures necessary for being successful. This class is interactive, and Dabblers will have the opportunity to make and taste two simple styles of cheese-- learning along the way about various flavor profiles and uses / pairings for cheese. Sourcing milk and uses for whey will be covered, and you can expect to leave armed with recipes, instructions, samples and even a culture of your own to get started on your journey towards making cheese.
Whether you continue making cheese in your kitchen or simply attend to experience the process, cheese will never look the same!

Linda Conroy has been making cheese and other traditional foods in her own kitchen for over two decades. She has apprenticed on two goat farms, where she was involved in the entire cheese making process-- from milking the animals to handmaking the cheese. Additionally, Linda has taken several advanced cheese making classes and has taught beginner's cheese making as well as traditional food and herbal medicine making classes for many years. She's excited to introduce Dabblers to the wonderful world of cheese!

Linda knows the topic inside and out, and her enthusiasm for cheese making is contagious. She gave us a good overview and showed us how to make butter, paneer, and mozzarella, which resulted in delicious samples. We even got to take home a Piima sample so that we can get started making our own cheese and butter.

Instructor was very knowledgeable, organized and presented in a clear manner. Shared great stories and there wasn't a question she couldn't answer from the group - which included some other cheesemakers.
