Guanciale, cured hog jowl, is one of the eight major cuts in Italian butchery and a great place to start for anyone with interest in at home curing. Join us at Salume Beddu where we'll take you through the curing process of guanciale and show you how to incorporate this finished product into a dish. You'll learn the process of curing, equipment, and length of time necessary to recreate guanciale at home, as well as sources for quality ingredients. You'll end the evening learning how to use this magical meat in a dish. We'll teach you how to master Bucatini all’Amatriciana, a must learn recipe in your pasta arsenal.

What a fantastic night. Marco & Ashley were very knowledgeable and made the whole evening fun. We not only learned how to cure Gunaciale but then how to make a delicious pasta dish with it. Met some lovely people, ate yummy food and learned lots.......already looking forward to our next class.
