Are you ready to move beyond cheddar? Maxed out Manchego? Want a fresh new goat cheese? Well, here is your opportunity!
Join Thomas as he takes you to the next level of cheese knowledge. At this class you will explore cheeses that seem familiar, yet new and interesting. As holiday and entertaining season is entering it's peak, delight and share with your friends some new and delicious cheeses and the goods to pair them with. We will provide you 5 cheeses and beverage pairings for you to examine, study and enjoy.
This is a class., mainly, for those who have a basic knowledge of artisan cheese, but even if you don't we can catch you up to speed. Hope to see you there! Participants must be over 21 to atttend.

Thomas Perry has worked in specialty foods in one aspect or another for the past 8 years, as a cook, as a producer, but primarily as a cheesemonger. He has twice competed in the Cheesemonger Invitational in New York City. Originally from New England he moved out to Chicago to share his love of cheese and farm to table cuisine with the Midwest. He is currently the head of cheese & specialty foods for Potash Markets in the Gold Coast section of Chicago
