Event Overview

Join the homesteading revival by learning the traditional art of vegetable fermentation! Fermented foods used to be a staple in homes across the country, and they're enjoying a big comeback in the last few years. Find out how you can enjoy the pleasures of simple, delicious ferments in this hands-on class.

We'll talk about why fermented foods are such an important part of your everyday diet, and how to safely make tasty, nutritious ferments in your own kitchen. You'll have a chance to taste homemade versions of sauerkraut, that robust German standard, and beet kvass, a sparkling Russian juice drink.

Then we'll dive right into making both.

Dabblers will leave with jars of kvass and kraut they've made themselves, a set of easy-to-follow recipes (including a generic “vegetable ferment” recipe), and the confidence to experiment in their own kitchens.

Comfort in the kitchen, including using knives and vegetable peelers.

Thom's passion for healthy, traditional foods has taken him on a journey in the past two years from canning to pickling to fermenting. He cares deeply about having access to delicious, nourishing food, and he loves to experiment with new and old recipes. When he's not playing around in the kitchen, Thom has a real job as an acupuncturist and herbalist.
