Event Overview
Mint, basil, oregano, sage, lavender ... they can take over a garden. Then what do you do? We'll talk about the basic herb preservation through drying and freezing, along with creative ways to keep your herbs working through the winter months. Recipes include:
Herb Jelly (mint, basil, lavender)
Fermented Mint Chutney
Julep Syrup
Salt-Preserved Herbs
Frozen Pestos
Lavender Honey Sorbet
We'll sample lots of these items, talk about ways to use them after you've made them, and cover basic cooking techniques and preservation food safety.
What to Bring
Bring an 8-ounce canning jar, and take home a jar of jelly.

I've been teaching people to preserve foods for years. Food waste makes me almost as cranky as eating the same boring things over and over. I'm always looking for new ways to expand the bounty for my farming and gardening friends. Grow it, preserve it, and eat locally year-round!
