Event Overview

Smooth sounds of Nola jazz and the aromas of creole seasoning will define your night in this fun, hands-on, class!


We'll share secrets for recreating Southern cuisine and explore new twists on traditional flavors with participants cooking cornbread and red beans and rice together. In addition to the red beans and cornbread we'll be cooking together, your instructor will discuss a variety of uniquely Southern cooking techniques—from blackened catfish to creating a rich and creamy roux and cooking shrimp to perfection. Plus, you’ll enjoy working alongside your virtual classmates before indulging in your finished product! It wouldn't be a Southern meal without a cold beverage of your choice--don't forget to pick up your favorite beverage for your class for your class!


Cooking isn't about recipes—it's about technique and passion for food! In our classes you'll work together with other students in a fun, hands-on environment.


• Optional additions to the red beans include sausage, ham, or smoked meats with details shared before the class.
• Please wear comfortable, closed-toe shoes and have long hair tied back
• The class concludes with participants enjoying their creation and a Q&A with the chef.


About Your Instructor: Joelle Brown is a Louisiana native who recently relocated to Chicago. Joelle inherited her culinary skills from her grandmother, aka “Momma T”, and began cooking at the age of 12. Many moons later, Joelle has perfected her skills as a home cook and competes in various culinary contests and challenges. Joelle has received an invitation to complete in the 2016 World Food Championship.

What to Bring

What you’ll need for the class:

o Medium sized pot or dutch oven (2)
o Cake pan or small square baking pan
o Non-stick spray
o 2 sticks of butter
o 1 egg
o 1/3 c milk or dairy substitute
o 1/4 c sour cream
o 1/4 c vegetable oil

    I thought this was good. It was a little confusing as I missed a note in an email that I was supposed to prepare the beans in advance. There was a note sent the day before and I missed it. That was my fault for not reading everything closely. It was the first time this chef had lead this class so it was a little choppy, and confusing at times. Overall, though he was a nice guy and knowledgeable and we all made some delicious food.

    I ENJOYED THE CLASS VERY MUCH AND FOUND THE CHEF VERY KNOWLEDGEABLE. HE ANSWERED ALL QUESTIONS PATIENTLY AND MY MEAL WAS DELICIOUS.

    Teacher was very knowledgeable and Flexible. She was good at providing substitutes when items were missing. I was missing the cajun seasoning.

    I enjoyed this class very much. I like to cook and spend a fair amount of time in the kitchen, but I found that I learned several new tips and techniques. A lot of people asked questions, me included, and she was great about answering all of them as we moved through the class. I probably would wear earbuds next time so I could hear everything a little better.

    Our instructor was awesome! I loved that in addition to our cooking lesson, she added some background and history in the experience. There was a period of downtime while we were waiting for our food to keep cooking so she added an impromptu mini lesson. I had a lot of fun and would want to take another one of her classes in the future.

    Joelle & Mariano's were both tremendous. Great pace and hands-on for those that raised their hands to help prepare. Amazingly tasty meal that was VERY worth the value. Can't wait for another class with Joelle.

    Great class in a very comfortable setting! Went with friends and enjoyed bottles of wine and food. Joelle balanced her knowledgeable instruction with hands-on interaction to keep class engaged and fun. Food was delicious and everyone received generous portions, as well as recipes to recreate the yumminess at home. Would def recommend!
