It turns out that you don't have to live on the coasts to enjoy great seafood. Chicago has an abundance of amazing cuts of salmon, buttery lobster and oodles of shrimp ... you just need to know where to look, how to handle and how to prepare.
In this class, Dabblers will learn how to select, purchase, handle, and prepare delicious seafood. Dabblers will walk away knowing how to fillet a whole salmon and cook a live lobster to perfection with simple recipes that will have your guests saying "no" to the cocktail sauce.
No experience necessary. All fresh ingredients, fresh fish and filet knifes will be provided from Butcher & the Burger.
Chef Allen began cooking with his mother as a young boy. Being of German immigrant parents, he was exposed to European cooking, as well as hunting and fishing, which played a key role in shaping his love for the outdoors and in forming the cooking style which he has developed over his lifetime. He has worked for several acclaimed restaurants in Chicago and has been recognized as one of the countries “best game chefs”.
