Perhaps you've read a bit of Michael Pollan or caught a documentary on the disreputable standards and conditions of slaughter houses. Maybe you love your furry friends so greatly you can't imagine eating one of their distant cousins any longer or you find meat simply unappetizing. Though veggie lovers come to a plant-based diet through a myriad of motivations, any interested party can decrease or eliminate their consumption of meat and enjoy benefits to their health and the environment.

In this class, Dabblers will discuss the effects of a meat-obsessed diet on our society and health, the reasons and motivations for transitioning to a meat-free diet, and the resources necessary to make the leap from meat-filled to meat-free consciously and confidently.

We'll address common questions regarding getting enough protein, preparing meals at home, going to dinner with friends and what to do if you don't like vegetables. Each participant will leave with the inspiration to explore the food system further, information on stocking a vegetarian pantry, cookbook recommendations and resources for sourcing all you need in Chicago without a garden. This workshop will be the beginning of a deeply satisfying and exciting relationship with food of the plant variety!

Kelli is a graduate student at Loyola University where she studies Social Justice and Community Development with a research focus in Urban Agriculture. She is deeply involved in Chicago's handmade community by running an eco-friendly craft business and directing the Urban Folk Circuit, Chicago's only year-round, traveling craft market series.

Kelli lives in Portage Park with her red-headed husband and they work to renovate their big, red urban farmhouse into an aspiring homestead equipped with raised bed gardens, heaping compost piles, and a small flock of hens. Meat-free for four years, Kelli continues to navigate the world of organic gardening, farm shares, co-ops, and bulk buying as a means to obtain whole foods in Chicago. She works to educate others on all things political, beautiful, and life affirming while striving to radically minimize her eco-existence.
