It is well known that a full, round, balanced diet is the strongest preventative medicine available. You are what you eat, after all.
This Dabble class aims to explore your most crucial medical arsenal: what your put into and onto your body. We'll discuss what foods to integrate into your daily diet to improve overall health and wellness. We’ll cover how oils, seeds & nuts, whole grains, spices & herbs, fruits & vegetables and fermented foods are the building blocks of human health. We'll discuss how the chemistry of what we drink, taste, smell, touch and breathe has verifiable effects on the human body.
Then we'll take a quick trip around the world and touch on various international edible medicine traditions, unveiling the deep knowledge other cultures have about their local floras and faunas and how, sadly, this knowledge alludes the traditional American diet. Finally, we'll bring it back home by focusing on local, Midwestern foods and plants.
Come away with simple recipes and a list of foods to stock in your kitchen. In time, you too will transform your kitchen and garden into a modern, urban apothecary. Sample and taste some whole food remedies as we eat through our garden & demonstrate in our kitchen!
As a bonus, various locally grown whole foods, herbs, teas and spices will be available for purchase through Edible Alchemy Foods Co-operative after the workshop. Happy eating!

Dietrich & Andrea Mattson-McGaffey are co-founders and co-ordinators of Edible Alchemy. EA is Chicago's local-source, sustainable & organic foods co-op, catering and workshop center based at their community center & rooftop garden in Pilsen. They are passionate about teaching the value of human connections to food, about self-sustainability, local foods and the transformative power of communities gathering to share stories and a meal.
