Asparagus: the heralder of spring! It’s one of the first crops up, and only lasts until the spring weather turns to summer. Thanks to our global economy you can find asparagus all year flown in from other continents, but the environmental impact is much lower if you buy local and preserve it yourself.
This Dabble class will teach how to take fresh, tasty asparagus, and preserve it in your very own ball jar to eat at your leisure later in the summer (or as a decadent treat in winter…). We will cover the basics of canning & preserving which you can later use for many other forms of pickles and jams besides asparagus. No longer an archaic culinary art form, preserving is gaining much popularity in kitchens and restaurants across the world right now as a way to increase self-sustainability skills, eat locally grown food all year, and to create shelf stable condiments and gifts for others.
All participants will go home with a quart ball jar of tasty pickled asaparagus, and a recipe to remind them of the method for pickling.

Andrea manages Edible Alchemy Foods Co-operative, a locally & sustainably-focused produce & bulk co-operative. She also manages the Eco Rooftop garden, teaching workshops to all ages. Her passion for food began while studying art at the Art Institute of Chicago, and extended into creating a structure allows people to learn skills like gardening, composting, cooking, preserving food, & using medicinal herbs while developing community bonds with all who cross her path.

Andrea was fun and informative. She truly knew what she was talking about and had tips and pointers as well as answers to any and all questions that were thrown her way. The Eco Loft and Garden space was awesome (and her garden made me super jealous). Andrea was also incredibly friendly and fun to learn from.

It was formal and informal! Andrea did a great job hosting and getting everybody involved, giving just the right amount of instruction and answering questions as we went! I had a great time, and got to know everyone's names in the class. Andrea also showed us her rooftop garden, where we got to pick herbs for the pickles! What a neat experience!!

really good hands-on skills. i left feeling confident and inspired to try pickling on my own. i also really loved the use of organic and local ingredients and the trip to the rooftop garden! and the snacks! andrea knew what she was doing and was excited to share her knowledge with us.
