Strawberry Jam. Strawberries.
Small, decadently sweet and tart, and the very first fruit of spring here in the Midwest. Creating your own sweet, fruity, and spiced concoctions is liberating. Think of the happiness a jar of lavender strawberry jam can bring when cracked for morning waffles in those cold winter months. Not to mention that jams make splendid gifts, potluck additions, and will surely brighten up surly mornings.
Jam was first made in the Middle East & West Indies, where sugar cane grows abundantly. It's believed that the Crusaders introduced jam to Europe, where it stuck and become a staple of everyday life - perhaps even associative. It was brought to America in the 17th century, and is currently undergoing a revival with new blogs, recipes, and books on modern jamming coming out weekly.
In this jam session class, we’ll focus on our farmer’s current seasonal offering : STRAWBERRIES! All participants will travel home with 2 half-pint jars of their very own homemade strawberry jam and an informational zine with a recipe to replicate. This class is BYOB, as there is a lot of stirring and not much exact measuring. (Wine can improve the taste of jam, I’ve tested it.) To jam!

Andrea manages Edible Alchemy Foods Co-operative, a locally & sustainably-focused produce & bulk co-operative. She also manages the Eco Rooftop garden, teaching workshops to students of all ages. Her passion for food began while studying art at the Art Institute of Chicago, and extended into creating a structure which allows people to learn skills like gardening, composting, cooking, preserving food & using medicinal herbs while developing community bonds with all who cross her path.

I had a wonderful time actually MAKING MY OWN JAM! I can't believe I did it! I'm two steps from a face-to-face challenge with Martha Stewart! I made some new friends, too!

This class was tons of fun! It was very hands on. I loved playing with the ingredients and learning the "alchemy" and the art behind Jam making and canning. Every step was explained in detail to thoroughly understand the reasoning. We each left with two jars of jam flavored to our group's choosing. I loved the class and I look forward to taking more canning classes.

The small class size was a plus - we all got to participate. At first, I was unenthused about the location, but it's near the El and was actually a really cool space.

I thought Andrea was very well-prepared for this class and clear in her instructions. The ingredients were all set up properly, and she had flyers and contact info for us to take home afterward. Also, I liked the pace and mood of the class -- relaxed, but I still got home at a decent hour on a weeknight. Oh, and the jam was delicious!

Andrea is generous with her knowledge and an excellent teacher. She makes potentially intimidating processes seem simple and doable. Plus, working with food is super fun! The venue rocks, and I was even able to purchase some homemade jams and fresh veggies while I was there. I'll definitely take another class with this instructor!
