It’s time for comfort food, Latino-Style! This group project always seems to turn into a party. Learn how to make traditional tamales with a variety of fillings all from SCRATCH! In this techniques class you'll learn how to select and prepare chicken and pork, make masa dough, and how to properly form and steam tamales. Much like any tamalada (Spanish for tamale party - a popular tradition in many Mexican households), together the class will make many tamales to eat in class and take home.

Joseph Giannini is owner of Paired Wine Co and a lover of all things wine. Joseph is a Chef and graduate of Kendall College and owner of Slammed Jam.
This was a great class. While I had made tamales before, I took this class to hopefully pick up some new ideas. I learned some new great techniques which I will use from now on. Joseph, the instructor, made the class very hands on. Myself and the other participants sampled and took home tamales.

I absolutely loved this class. Very Small Class size ensured hands on in all phases of prep for tamales. generous tamale take home to boast to your friendamily. Good company and conversation while we steamed the Tamales. Instructor was very personable and openly shared trials and tribulations of living a Maker/Doer life. The Space is tiny, they are not kidding, but lovely. Free parking on Ashland. Minor schedule adjustment well communicated by email and text. And I appreciated that we were asked to wash hands and use gloves for sanitation. Well done you guys! I would def do this again!

The venue was great, as was the timeframe. We got to prepare the veggies and salsa, as well as the masa and tamales It was a fun evening.
