This is the easiest 30-layer cake you’ll make with 15 crepes and 15 layers of cream.
I’ve been in love with the idea of crepe cakes since I first laid eyes on them; elegant with rustic charm and so pretty!
Now, add in the colors of my favorite rainbow and I'm in love.
I’ve tested several variations of this crepe cake for some time when I discovered the winning cream for it; based on the popular Spartak layer cake, (a class I also teach).
The frosting has a delicate and wonderfully creamy but light flavor it has sweetened condensed milk in it so you know it’s good. I hope this crepe cake becomes a new favorite for you not only in pride but also for any occasion that requires a rainbow.

Joseph is a lover of all things wine, cooking, and learning. He started his career as a backup singer & Dancer for Cyndi Lauper.
A Chef and Graduate of Kendall College in Chicago, a pioneer food truck owner, and a lover of dogs, he brings his culinary talents to each class, dishing up eclectic and inventive marvels to pass the time.
Each class with Joe flies by filled with his ongoing chatter, storytelling, and laughter. His friendly and sociable personality welcomes each student when they walk in the door.
Tommy is a Graduate and Instructor from the School of the Art Institute of Chicago, he brings his artistry to every class. Design, inspiration, and attention to detail are all things that describe Tommy. When it comes to any art form - making candles, arranging flowers, designing or gardening, you'll find a warm smile and share a calming environment with Tommy.
This was my first "Dabble".
At the end of the experience, I can say I learned how to make a crepe/rainbow-pride cake; so in that regard, this was a success.
I have 2 criticisms of the experience. The first being that the ad of the class was misleading. Because the ad did not specifically state, I went in with the impression I would be walking out with my own Crepe-Cake that I would be learning how to make. That was not the case. We made one cake for the entire group. As that was how it played out, that should have been described in the ad. The space was tight. Gratefully there were only 3 "students". If we were to have the max possible indicated in the ad, it would be been extremely uncomfortable. Especially in the time of covid. (Gratefully he offered to wear a mask, and seemed to have extras if anyone needed/wanted one). Had I know the space was that small, and that we were not making individual cakes (in order to be spaced safely apart from each other), I likely would not have signed up for this one.
I'll leave my critical commentary to the teacher specifically. He was a very nice guy, for sure, and I'm hoping this was just him having an off day.
