Learn how to make “THE Basque Cake” from Pastry Chef Amanda Rockman. Named one of Chicago’s most iconic desserts, the basque cake is a creation that has been featured in various publications and it can be all yours in this hands-on class. Chef Rockman will showcase how to create this dessert from start to finish – then you will make it with her guidance. You'll get to make mini basque cakes in the class and we'll all sit down to eat and enjoy the best cake you'll ever put in your mouth. The class will cover:

Cake batter
Pastry cream
Formation and baking
How to make variations of this dessert so you can create your own

Amanda Rockman attributes her love of pastry to her mother’s baking; she grew up around an abundance of tarts, cookies and cakes. At 19, she moved to upstate New York to attend The Culinary Institute of America, earning an A.O.S. in Baking and Pastry Arts. She has worked in such prestigious restaurants as Fino and Asti Trattoria in Texas, TRU, L2O, Spring, The Peninsula Hotel Chicago,The Bristol, and Balena, and is currently the Executive Pastry Chef of One Off Hospitality group's gold coast restaurant Nico Osteria. Upon receiving the Jean Banchet award for Rising Pastry Chef, Rockman went on to compete on Bravo’s Top Chef: Just Desserts. She was awarded the Chicago Tribune Pastry Chef of the Year in 2013.

Amazing and delicious! It was fun to bake with Amanda Rockman in the kitchen! She's extremely knowledgable, patient, and funny. We made and ate so many Basque Cakes and even got to take some home! Mmmmmm
