Event Overview

This demo class is an intro course to basic fermentation, featuring the popular fermented beverage Kombucha! Instructor Greg Tefs will demonstrate the process for making kombucha at home, and show you how to use it to make a fabulous healthy sparking soda. He’ll discuss the basic science behind fermentation, and show you the types of tea, sugars, flavoring options, and necessary equipment and supplies that you need for success. Tasting samples will be provided as well as an optional kombucha starter kit for an additional $15. Kombucha starter kit includes: scoby, glass jar with kombucha, & a recipe.

Chef Greg Tefs is a classically-trained chef and for nearly 12 years worked as a Chef Instructor at Le Cordon Bleu Chicago. He brings proven culinary technique to a wide range of international cuisines. Chef Tefs believes in the locavore philosophies of reducing the distance from farm to table and using produce available in-season at peak flavor and freshness. His current fascination is healing through nutrition, especially the restorative powers of fermented foods.
