Event Overview

Learn to make your own handmade chocolates! In this hands-on class, you’ll learn how to temper chocolate and use it to make your own customized rochers (nut and dried fruit clusters). Tempering chocolate is necessary to achieve firm, shiny chocolate with a good snap that will melt in your mouth, not in your hand! Instructor Jim Loellbach will cover the basics in chocolate-making such as how to select the right chocolate, essential tools/equipment, tempering techniques, and how to make molded chocolates and rochers. Just in time for Valentine’s Day, you’ll leave with the skills to make some special treats for your loved ones… or just treat yourself! This class is BYOB, and light snacks will be provided.

Jim Loellbach is a professional chef in Chicago. As a child, Jim spent summers at his grandparent’s small farm in Wisconsin where growing and preserving food was a necessity. At age 39, after a career as an aeronautical engineer working for NASA in Cleveland, Jim attended Le Cordon Bleu and made food and cooking his life. Hard work (and a bit of luck) landed him at the Four Seasons Hotel in Chicago where he got his true culinary education, learning everything from butchery to the intricacies of pastry under some of the best chefs in the industry. Since then he has worked in restaurants such as the Pump Room (as Banquet Sous Chef) and C Chicago (as Pastry Chef), before starting his own personal chef business. His experience with farm life, exceptional chefs, and worldwide cuisines has taught him to start with the highest quality ingredients, season, and cook them with care, and let them speak for themselves.

    The Handmade Chocolate class was great! I'm new to making chocolates and this class was very informative without feeling like a formal class. I really enjoyed learning the techniques and then making my own milk and dark chocolates to take home. I walked away with the knowledge to make awesome chocolates on my own.
